homemade spinach & goat cheese ravioli
I spent last Saturday night making homemade pasta with David. Neither of us knew what we were doing, and really, he did all the hard, messy work, but we had so much fun making it together. Thankfully for me, David’s great at following directions, and the pasta he made and rolled was, well…just like Jamie Oliver said it would be: incredible. My contribution was the filling, and I did a goat cheese, pecorino, spinach, caramelized onion and garlic mixture for our raviolis. It was a bit of hard work, but it’s such a satisfying thing to make fresh pasta yourself and then finally: enjoy eating it!
This week we’ve been enjoying the garden here. Everything is ripening and in full bloom. The boxes are full of rainbow chard, strawberries, chives, basil, rosemary, lettuce and tomatoes, and the trees are full and heavy with apples and peaches.
David keeps telling me my peach intake is too high, but they only come once a year, and truthfully, they’re what I look forward to each day.
